It's beans that you should be reaching for. And no, not the classic Heinz brand — this isn't a full English breakfast type of dish. It's more akin to the Spanish Revuelto con Alubias Blancas, which combines scrambled eggs with white beans as well as paprika, peppers, and Manchego cheese. For this hack, you can replicate the Spanish dish. Or, you can use this combo of white beans and eggs as broad inspiration. 

After all, not only are white beans tasty, but they also pack a wallop in the fiber department (one cup of cooked white beans contains about 11 grams of fiber). This, along with the bean and egg's hefty serving of protein makes it a super filling and nutritious meal. So how should you prepare this combo? You can start by sauteing your drained, canned beans along with any aromatics and veggies you might want. Then, after a few minutes, pour in your egg mixture and cook until done, scraping the pan throughout to get that light, airy scrambled texture. Then remove from heat and serve.

Making these ingredients work together

Revuelto con Alubias Blancas uses spices such as cumin and paprika along with peppers, Manchego cheese, and other ingredients to bring a bit of spice and richness that makes it a true delight. This is a great template to follow for this dish. But it's also just one of many possibilities for the egg and white bean combo. If you're a bit bean cautious, you can start simple by adding it to a basic scramble with just salt, pepper, and cheddar cheese. White beans such as cannellini, navy, and great northern beans, are mild enough in taste that they go with just about anything.
