You can basically put anything you like into colorful, perfectly cup-shaped sweet peppers. Traditionally speaking, the stuffing consists of ground beef and rice in a tomato-based sauce, but you can also pack your stuffed peppers with a gorgeous vegetarian barley and walnut-based filling flavored with currants, feta cheese, olive oil, and tangy lemon. In fact, similar Mediterranean flavors (vegetarian or not) are fantastic for stuffed peppers because the complex flavors pair beautifully with the peppers themselves.

Bell peppers are sometimes called sweet because they're not spicy, but they don't taste sugary at all. Rather, they're crisp, juicy, and a little astringent, perfect for pairing with the light, aromatic flavors of Mediterranean cuisine (not to be confused with the intensity of Middle Eastern food). Similarly, ground turkey is often used as a swap for ground beef in Mediterranean-style stuffed peppers since the beautiful aromatics and earthy herbs don't overwhelm it. Ground lamb is also a good choice for a stronger, meatier protein, while lentils are a delicious vegetarian option.

Among the array of seasonings you should stock to build Mediterranean flavors inside your stuffed peppers are basil, rosemary, and thyme, along with more niche flavors such as fenugreek and saffron. All of these can be kneaded into your ground meat of choice, or used to flavor the grain you use. Rice is classic, but barley, farro, and couscous are also often used in Mediterranean cooking.

Assembling Mediterranean stuffed peppers for maximum flavor

One of the best things about sticking to traditional Mediterranean ingredients for stuffing bell peppers is the array of delicious flavor combinations. Not only are there dozens of herbs and spices to choose from when making Mediterranean food, you can also play with combinations such as sweet and savory, nutty and citrus, or herby and cheesy. For instance, you might saute ground lamb in garlic-infused olive oil, stirring in a combination of fresh mint and oregano before mixing it with saffron rice. Toss in some golden raisins and toasted sunflower seeds to round out the flavors.

You can also stick with flavors we're more familiar with in the U.S. and still produce deliciously authentic Mediterranean combinations by generously seasoning ground turkey with a combination of ground cumin, paprika, and thyme. Mix it together with beautifully nutty, chewy boiled farro and add a mix of minced olives and feta cheese. Drizzle everything with a lemon-infused tahini sauce or cool, creamy tzatziki once the peppers come out of the oven.

It's also fairly easy to make these peppers vegan simply by replacing animal proteins with crushed walnuts or cashews and tossing them together with couscous or quinoa, along with chickpeas and a generous dollop of baba ghanoush (a zesty eggplant-based dip). They come from the oven bubbly and fragrant, ready for a topping of romesco sauce. If you're vegetarian instead of vegan, try plopping a spoonful of strained ricotta cheese infused with lemon zest on top.
