Creative Cook Makes 30-Minute Sauteed Cabbage 'Pasta' With 5 Ingredients

Who knew that a head of cabbage could do a surprisingly convincing impression of pasta? Well, TikTok creator Margot Sisson knew, as she demonstrated with a creative dinner that uses tender roasted strips of cabbage for the noodles then combines eggs, Greek yogurt, and Parmesan for a creamy sauce. The whole thing comes together in under 30 minutes, and it looks like the real deal, except you're basically eating a whole head of cabbage for dinner.

It all starts with the cabbage, of course. The creator uses hispi cabbage which makes sense. It has tender leaves that soften quickly into a not-too-dissimilar consistency to long pasta noodles such as fettuccine. Other types of cabbage could work to varying degrees: Savoy cabbage would be a nice choice although its crinkly leaves will give the cabbage-pasta a slightly different texture, and white cabbage could also be subbed in if that's what in the fridge. 

The cabbage is cut in half through the core and then one half is placed cut-side down so that thin slices can be cut through the wedge, working from the end toward the core. The slices form long, noodle-like ribbons which are roasted in the oven for 15 to 20 minutes, until tender. Unlike boiling or steaming, cooking cabbage in the oven makes it extra crispy and slightly caramelized around the edges, bringing a rich sweetness while the noodles themselves stay tender. But if you would prefer, you could also throw the cabbage-noodles into a pan and saute until al dente or into a bowl with some water and microwave until tender.

Change the cabbage 'pasta' sauce depending on what you're craving

Once the cabbage is out of the oven, the creator moves it to a skillet over medium heat and stirs through whisked eggs until they are cooked, before taking it off the heat and stirring through Greek yogurt and freshly shaved Parmesan. This is a great starting point but the idea can go in new directions once you have the cabbage-noodle base down. 

Keep the same creamy base and add some crispy bacon for a low-carb take on a classic Italian pasta sauce, carbonara. Or for another Italian-style bowl, stir the cabbage through a simple ragu made with canned tomatoes, garlic, and ground beef. Other ways to dress the cabbage could involve pesto, creamy white sauces, or a simple browned butter and Parmesan combination. Given that you're eating so much cabbage, you don't need to add other veggies but you could throw in some toasted breadcrumbs, crispy onions, or cruncky chickpeas for textural contrast. The trick is to treat the cabbage like a pasta shape rather than expecting it to taste exactly like a wheat noodle. And from there you can use this underrated, nutritious, and inexpensive vegetable to create a whole new take on your go-to pasta dinner.

Creamy cabbage pasta (serves 1) -1 small head of cabbage, sliced as seen in the video -1/3 cup egg whites -1 egg -1/4 cup Greek yogurt -olive oil -salt & pepper -fresh shaved parm, for garnish 1. Preheat oven to 400° 2. Add sliced cabbage to a baking sheet with parchment paper and spray or drizzle with olive oil. Season with salt and pepper and roast for 15-20 min. 3. Meanwhile, whisk egg & egg whites in a bowl and season with salt and pepper. 4. Add however much cabbage you want to a skillet over medium heat and add the egg mixture. Mix the eggs around with the cabbage until eggs are cooked. 5. Remove from heat and stir in the Greek yogurt. 6.
