Here's a hack to keep your week humming along: Lean into easy-to-prep breakfast sandwiches that come together seamlessly in a muffin pan.
To get your sandwiches going, start with a jumbo greased muffin tin. If you'd like to mix up the equation, you could also incorporate sturdy veggies like red peppers. You can also add more tender options like spinach or a few slices of tomato, but they do have more moisture content, so they may not keep as well in the fridge. Or, give the tops a flavor boost with honey butter or even hot honey butter if you're feeling spicy. If you'd like to walk the savory and sweet line, you could also smear your breakfast sandwich with some jam just before eating. One thing is for sure, you better call dibs (or make plenty of extras) before others start to devour your muffin pan day-starters.
