When it comes to vintage cooking, there are plenty of old-school no-bake desserts that still taste amazing and should definitely still be on rotation in modern kitchens. Cooks enjoying convenience foods that were newly accessible at the time, like instant pudding mix and canned fruit, loved combining them in creative ways to build desserts that felt elegant but took no time at all to put together. One such combination that takes inspiration from those days blends crushed pineapple and instant vanilla pudding with a heaping cup of sour cream inside a premade graham cracker crust to create a beautifully rich, tropical cream pie.

Just as instant pudding mix gives no-bake cheesecake a better texture, so, too, does it help thicken and stabilize the filling in this fruity pie, ensuring your slices stay neat and tidy on their trip from the pie dish to your plate. The pudding also adds a lovely, floral vanilla flavor and a hit of sweetness from the sugar in the mix. Meanwhile, the crushed pineapple is the main flavor, with its tangy sweetness and juicy texture, and the tart sour cream adds richness and cuts cleanly through the sweetness.

This dessert may taste fancy, but it's truly a simple matter of folding together a packet of instant pudding together with an 8-ounce can of crushed pineapple (juice and all) and a cup of sour cream. Once poured into the pie crust, everything needs to chill in the fridge for several hours to give the filling enough time to thicken properly, as no one wants a watery pie.

Mixing up a little slice of tropical heaven

Since three out of the four ingredients needed to make this pie are shelf stable, it's easy to keep them stashed away for when you need an easy dessert to take to a potluck, or want to make an impromptu celebratory treat. The trick is to choose ingredients you enjoy eating by themselves, especially when it comes to picking high-quality sour cream, as any one ingredient that tastes "off" could ruin the whole pie. Choosing a good sour cream is especially important, as a lower-quality product could make your dessert taste overly tart, overshadowing the other flavors with its intensity.

The fun part of this dessert, however, is that you can create different flavors simply by switching out the vanilla instant pudding. For instance, if you're crazy about pineapple, you could use pineapple flavored instant pudding, or use a coconut pudding mix for a piña colada pie. Try banana instant pudding, topping the pie with fresh banana slices, a drizzle of toffee sauce, and cloudy whipped cream. White chocolate instant pudding would be decadent blended with pineapple and sour cream, making it especially perfect as a dessert during the holidays.

Whipped cream and fresh fruit are also far from the only things that you can add to the top of this pie. A drizzle of salted caramel sauce is an expected addition because it's delicious with pineapple, but you could also try shaved scrolls of white chocolate, or candied nuts.
