Grab The Tortillas To Turn Boring Scrambled Eggs Into Crispy Skillet Breakfast Quesadillas
Scrambled eggs may be a breakfast staple, but make them often enough, and they just become a boring breakfast. If you sense that may be happening when you make breakfast, it may be the perfect time to cook those eggs between two flour tortillas for breakfast quesadillas that don't feel like just another boring egg plate. You get gooey cheese mixed with soft scrambled eggs, maybe some peppers or green onions, and some chopped sausages or ham. This is an excellent breakfast for college students because they're cheap and easy, and my family loves them so much that they've become a popular weekend request.
There are a few different ways to make scrambled egg quesadillas, but this method simplifies the process because you can do everything in one pan. Smear a little butter or oil on a flour tortilla and place it in a pan roughly the same size. This is so the contents stay within the tortilla instead of spilling out everywhere. Whisk a few eggs in a bowl and pour them over the tortilla along with any other toppings you'd like, and top the whole thing with shredded mozzarella, pepper jack, or maybe Oaxaca cheese (my family's favorite). Grab another tortilla and place it on top, then cover your creation with a lid so everything cooks evenly. The tortillas are sealed shut thanks to the melted cheese.
How to upgrade your skillet breakfast quesadillas
The thing about quesadillas is that you don't want to lose the contents when you flip them. This can happen when you use a cheese that's too moist or when you add extra ingredients like diced tomatoes, or simply overstuff and get too enthusiastic with the flip (not that there's anything wrong with that). One way to prevent this is to use a plate when you flip the quesadilla rather than a spatula. By using a plate, you can freely add any toppings to your eggs — like leftover shredded chicken, or diced jalapeños or bell peppers — without worrying about the quesadilla getting too heavy and drooping so much that everything falls out.
The bonus to any great quesadilla is the cheese that falls out onto the cooking surface and browns to a crisp, but since you're combining the cheese with eggs, that's not likely to happen on its own. Before flipping over the quesadilla, take some shredded cheese and drop it over the tortilla. This will end up on the bottom after the flip and brown all over the tortilla surface, adding that delectable cheesy crunch. Once your breakfast is ready to serve, the only question that remains is what to serve alongside it. My favorite side is a tomatillo salsa verde for the kick you need in the morning. You can also go with a serving of restaurant-worthy refried beans, or for a cool, tangy touch, a side of crema. Whatever you choose, this is a scrambled egg breakfast that's far from the same ol' same.
