  • 5 stalks of Rhubard
  • 2 cups strawberries, cleaned and cut in half
  • 4 bags of Black tea or the equivalent of loose tea in an infuser
  • 5 cups of water
  • 1 - 2 cups of sugar

Strawberry Rhubard Iced Tea

Super simple recipe perfect as a summer reading companion.

Instructions

  1. 1Place rhubarb, strawberries, and 5 cups of water in a large sauce pot and bring to a boil.
  2. 2Reduce heat and simmer for 1 hour. Stir at your leisure, if you’re into that sort of thing.
  3. 3Add tea bags and steep for about 5 minutes.
  4. 4Strain the whole thing! Use your spoon to squish all the liquid out of the mash. Be careful! That stuff is hot!
  5. 5Dilute with water and add sugar to taste. I doubled the amount of liquid and added about 1 cup of sugar. If you like a stronger taste, add less water. Sweeter? Add more sugar. You get the picture.
  6. 6Chill in the fridge until cold.
  7. 7Serve over ice and enjoy!
  8. 8Over 21 addition: Add a shot of good whiskey to a glass of this to amp it up a bit., This can also be done with just rhubarb if you need to omit the strawberries. Same directions.
