In this recipe from Juice: Recipes for Juicing, Cleansing & Living Well, the earthy sweetness of parsnip, carrot, and beet gets a sweet-tart boost from Fuji apple.

Special equipment: You’ll need a juicer (we tested this recipe using Breville’s Juice Fountain Plus) or a high-speed blender, such as a Vitamix or Blendtec.

Instructions

  1. 1Peel the parsnip, carrots, and beet. Scrub the apple and cut it in half—no need to remove the core and seeds.
  2. 2Juice or blend the ingredients. Serve immediately.
