  • 1 cup canola oil
  • 2 cups sugar
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups floured blueberries (fresh or frozen)

Blueberry Loaf

This recipe for blueberry loaf I have also made it into muffins I just sprinkle a little sugar on the top for an added crunch.The loaf is very moist and very fresh tasting even though I always use frozen blueberries.This recipe also freezes well,I have frozen both the muffins and the loaf.This recipe makes two loaves,one to enjoy now and one to freeze.

Instructions

  1. 1Cream the oil and sugar very well.
  2. 2Beat in the eggs one at a time;beating well after each one.
  3. 3Combine flour,baking powder and salt.
  4. 4Add the dry ingredients to the egg mixture alternately with the milk and vanilla making sure they are incorporated well after each addition.
  5. 5Stir in the floured blueberries.
  6. 6Pour into 2 greased loaf pans (9×5×3-in.).
  7. 7Bake at 350 degrees F. for 1 hour,or until golden brown.Allow to cool 10 minutes on a wire rack.Remove from pans to cool completely.
