I went to an asian food store and bought loads of lovely things I don't know how to cook. :-)
One of them is yuba, or bean curd skin. I got a package of the dried sticks (not the sheets), but because I don't understand Japanese, I can't read the instructions.
Any suggestions for veg recipes using yuba?
Also, does anyone know the nutritional info for yuba? I googled it, but didn't find anything.
