I'm a very houndy eater, but entirely unhoundy when it comes to cooking. Have been trying to remedy this by making dinner a couple nights a week. So:
Tonight, I tried a recipe for sausage and yorkshire pudding from Joy of Cooking (basically put pieces of cooked sausage in bottom of pan, pour pudding batter over it, bake). Followed the recipe to a T, but substituted turkey sausage for pork. The finished product was dismal--the sausage was fine but the batter stuck to the bottom of the pan and tasted bland. Could this be because of my turkey substitution--i.e. not enough (any?) fat at the bottom of the pan to cook the yorkshire pudding with?
Could anyone suggest a better recipe for this type of dish? Even a great yorkshire pudding recipe would be great... This one was 1c. flour, 1/2 c. milk, 1 tsp baking powder, 1/2 tsp salt, 1 beaten egg...
