So, I'm making a bunch of tamales for friends' anniversary party this weekend. I rendered some lard last night; tonight I'll roast a chicken and make the guajillo sauce. Gots my masa and my dried corn husks, I'll probably put them together Saturday afternoon. In the midst of my preparations, my husband is making dinner for the family, shucking some beautiful fresh sweet corn, and he innocently asks me (as he stuffs the fresh, green husks into the compost can) if you can wrap tamales in fresh corn husks. And ya know what??? I don't have an answer.
