had 1 1/2 hours notice about dinner guests wednesday night and fortunately i had already planned on trying out a lebanese lamb and green bean stew (and thus had all the ingredients at hand), so i just made that and prayed the lamb would be done in time. however, i had to cube the shoulder, string the beans, peel the tomatoes etc etc. i served it with basmati rice (which was the only rice i had...) and steamed broccoli and cauliflower. dessert was mrs. smith's peach cobbler (baked while we were having dinner) and vanilla ice cream.
usually, i fall back on a shrimp with cilantro and coconut milk dish (served with rice). you can no doubt tell that i'm not a very experienced cook!
i'm curious: what usual suspects do you conjure up when last minute guests arrive at the door?
