New to West Loop, & Chicago, & USA -- various questions

Just moved to Chicago from Canada. The variety of retail stores is great, but I have yet to find:

- duck, preferably fresh, preferably parts (specifically breasts and fat).

- good stocks and demi-glace (I have seen the suggestion for Spice House, but these appear to be some sort of commercially prepared, dehydrated products)

- a good butcher near me in the West Loop. I realize this is an ironic question given the presence of Fulton Market, yet all the shops there seem to be wholesalers or "retailers" who don't cater to someone looking for meat for one meal for one or two people.

- A good bakery. My kingdom for a half-decent baguette! (The "bakers" at Dominicks should be fired for the elongated Wonder Bread loafs they pass off as the real thing).

I have a copy of "A Cook's Guide to Chicago," but nonetheless have to ask here. Thanks for any pointers.
