New Waffle Maker Help!

So, had a Waring dual belgian waffle maker for a couple years and it worked great. Always had good, crispy waffles using a tried and true recipe. It finally gave up the ghost so had to invest in a new one. We have a very large family so I decided to invest in a commercial model made by Carnival King hoping for faster cook time and a little more durability.

Now, using the same recipe with the new waffle iron the waffles do not crisp up. I've tried everything including adjusting the temperature up. Adjusting down and cooking longer, nothing seems to work. I don't understand what it could be. It's definitely not a heat deficiency problem, as this thing cranks up to 550 degrees if you turn it all the way and it will burn a waffle in no time. I've found a sweet spot that cooks them in about 2 minutes and gives as close to crisp as I can get, but it's still soft compared to the Waring. I'm wondering if a difference in the grate surface can affect the crispiness? I don't know what else it could be, like I said I've used the same recipe for ages and never had a problem. Any ideas?
