vinegar/wine question

Hi, I have a gallon jug of what was once summer fruit wine that my Dad made in about 1985-1988. Until today it remained sealed from when he originally began the fermentation. I opened it and found the most beautiful smell of summer fruit and, what is probably now, vinegar. Can anyone tell me if it is possible to now pasteurize and bottle the vinegar or if it could possibly be a health risk? Thanks!
