Vietnamese Seven-Courses FISH

Just went to a Vietnamese place, across the strip-mall from Au Lac (the Vietnamese vegan place) in Fountain valley (my in-laws live there, and my mother-in-law had a coupon). Something-Something Bistro; it escapes me now.

However, had what I thought was a great "Seven Courses Fish" (or was it five?) presentation, even though I think they may have "gringoed down" for us(no really intense herbs in the herb plate for instance)

Is this a common dish? (I haven't seen it referred to before, or certainly not as frequently as "Seven Courses Beef") Is what I had a good version? If not, who does it better?
