Upstairs at Bouley - great food, horrible service

Went to Upstairs at Bouley for the first time last night and though the food and ambiance were incredible, the service was up there with the worst I've experienced in New York. Nevermind that it's a no-reservations place and two other sets of two that came in after us were seated before us (annoying as it is, I understand the need to service high-end repeat customers...) What really bugged me was waiting 30 minutes just to order, then 30 minutes to get our appetizers and another 30 minutes after finishing those for our entrees. I would have loved to have tried dessert, but after all that, I figured we'd be there all night if we didn't get the check right away, which was a good decision, as it took about 15-20 minutes for them to run the credit card. I wasn't expecting the service Upstairs to be anything like it is across the street, but I have to wonder...are they just working out the kinks or will the waitstaff Upstairs always be a far climb from what New Yorkers are used to? Given how much I loved everything else about my experience there, I plan to return, but hope that the master will have worked this problem out by then...
