Upsetting dinner at Brushstroke, what should have been done?

I just had an extremely upsetting dinner at Brushstroke and wanted to get an opinion. We had to wait half an hour for our table and then had to wait another hour for our first course out of 8 to arrive. I probably should have just left but I did not. This resulted in our dinner ending at well past midnight for a reservation that should have started at 9:15pm. The sommelier tried to compensate by offering a bit of wine and tea but every other time I've experienced this we have either received our meal for free or received a large discount. Neither of these things happened. So my question is, what would you have expected in this situation?

Sidenote: the food was a bit uneven. There were a couple of standout dishes like the pork belly, chawanmushi, and sashimi but the rest were a bit boring and nothing special.
