Traditional cheese cake styles

I would love some information as to what were the authentic Shevuos cheese cake recipes like. I am pretty sure the New York cream cheese based cakes are an American invention. But did they mix in a lot of sour cream (smetana) to achieve a similar effect in Eastern Europe? I heard that German Jews made/make a cake from farmer cheese with a much lower fat content and think I bought some of that type in the old Gruenebaums on 181st Street in Washington Heights. I understand they are still baking in the place they bought in Lakewood Nj and still have retail outlets but wonder if they sell the genuine German Jewish specialties.
I heard that the cakes with pineapple and raisins and nuts are a Hungarian tradition, is that true.
