Trad + Splurge Meal Options in Paris

Hi everyone!

Brand new to the forum here, but love reading the advice doled out by many local experts.

My wife and I are headed to Paris for the first time for a short 3 day/3 night trip, staying in the Marais. For the most part, we are content wandering, getting "lost", and letting our stomachs be our guides. For example, we know we'll spend some time at Marché des Enfants Rouges at some point.

We do know, however, that we want to spend some money on one ultimate splurge meal (a multicourse but fun, not overly stuffy option) for our 20th anniversary and want to have one classic, traditional French meal.

The more I study, however, the more confused I seem to get. One person's "must visit" restaurant is the next person's "tourist trap."

Any advice you can give here will be helpful.

Splurge Options we're considering:
-Septime: One Michelin star and one of Forbe's recent 50 Best Restaurants in the world... honestly, as I look at pics of the food and restaurants, this looks completely like our vibe.
-Le Jules Verne: newly redone; can't beat dining in the Eiffel Tower.
-Ciel de Paris: probably the restaurant with the best views of the city.
-Apicus: Michelin Star, Beautiful 19th Century home... also looks a lot like our vibe.
-Le Train Bleu: one of Eater's hottest new restaurants in Paris, and the pics make it look gorgeous inside.

Traditional Options:
-Benoit: the only bistro in Paris with a Michelin star
-Josephine Chez Dumonet: this one is controversial... LOVED by many, but others claim it's an over-priced tourist trap... BUT that Grand Marnier soufflé looks gorgeous.
-Allard
-Chez Monsieur
-Le Procope: certainly touristy, but, hey... it's our first time to Paris and we're tourists!

Any thoughts? I really need help narrowing down my options here.
