I make pot roast in my slow cooker quite often during the winter by just browning the roast in seasoning, and tossing it in the slow cooker for 10 hrs with about 1/3 cup of water. It comes out so amazingly tender, it's my favorite dish. I do all my veggies separately because my slow cooker is pretty small, and I wouldn't have enough meat for the three of us if I wanted to squish some veggies and potatoes in too.
There was a good sale on beef stew meat this morning, and I'm wondering if I can do something similar with that. I don't have most of the fixings for beef stew, just some potatoes, but I was thinking of doing mashed potatoes, not roasted, and I have salad fixins for veggies.
