Your best tomato sauce recipe

I have made tomato sauce many, many times but have yet to arrive at a truly sublime version.

I have used canned tomatoes of all sorts (san marzano, muir glen, etc), as well as fresh in season tomatoes and tomato puree. I have tried quick, "fresh" sauces with very few ingredients, and long simmered ones with many, as well as pureed marinaras. I've used white wine, red wine and various liquors (vodka, madiera, cognac, etc).

Some of them have been very good, but I'm looking to reach the next level of goodness, where I just want to scarf the sauce down all by itself.
