Is it just I, or have others made a simular observation? In some places there is a consistent long wait for your order to arrive after being seated and the order placed. Others, just the opposite. These places remain the same in the time of service year in and year out. I know the answers will be that some prepare every thing fresh, however, a dish such as gumbo is prepare before a patron arrives, jambalaya etc. No one prepares fried soft shell crab in advance or broiled fish etc. yet the time factor is always there. So much so, that when plans are made to visit such or such, you know there will be a wait. I don't care to name particular establishments, but just asking if anyone notices this and any guess as to the reason.
