We have a 4.5 lb boneless leg of lamb from CostCo -- Australian, tied in net and vacuum-packed in plastic. Normally we cube it and make some sort of curry out of it, and it works great for that, but we'd like to roast it whole for Thanksgiving. I've seen some great-looking recipes online, but notice that the legs of lamb shown in the accompanying pictures have serious fat caps on them. Ours has none. Does anyone have a really great recipe that works well for a lean boneless leg of lamb, or advice as to how best to roast it? Nothing with bacon, lard or any other pork products, please.
