TAGINE - Home Cooking Dish of the Month, January 2019

Happy New Year to our Dish of the Month community and welcome to the January 2019 reporting thread!

This month we are cooking TAGINE, a North African stew of spiced meat, fish and/or vegetables prepared by slow cooking in a shallow earthenware cooking dish with a tall, conical lid from which the dish takes its name.

Use this thread to report on Tagine you make. Pictures are not required, but are encouraged. In the spirit of DOTM, this is a place to expand your personal culinary boundaries. So, seek out new-to-you versions of the dish to try out this month.
