I've never been fond of cauliflower, but my hubby is, so I cook it for him. A friend of mine gave me this recipe recently, and I have to say: WOW!!! I couldn't stop eating it, and made it 3 times already. I thought I'd share it.
I highly recommend it to cauliflower lovers and haters alike.
re: provenience, I asked my friend and it's from a recent Gourmet magazine, but it's reproduced in her own wording.
I hope that's ok.
mash 1 clove garlic with 1/2 teaspoon kosher salt into a paste. place in a large bowl, add 1 flat anchovy filet (rinsed and finely chopped) and 2 tablespoons capers finely chopped. Wisk in 1 1/2 tablespoons lemon juice, black pepper and add 1/4 cup olive oil in a stream while wisking. dressing can be made 2 hours ahead.
Boil 1 head cauliflower cut in small florets in boiling salted water for 4-5 min, drain well, toss hot cauliflower with dressing. Cool until warm, tossing occ., then add parsley and toss to coat.
p.s. I don't usually measure ingredients, however I found it necessary with this recipe, for a perfect balance of flavours.
