Suggestions for our Honeymoon (Tokyo/Kyoto)

My fiance and I will be going to Japan in December for our honeymoon. I'm really looking to book a couple of special restaurants and a few general recommendations.

The two we would really love to get would be

Sushi Saito in Tokyo

We've previously tried sushi Iwa and sushi Kanesaka in Tokyo - while both were reasonably good - we're really looking for the next level. I know sushi Saito is notoriously difficult to get a booking for now - even our concierge at Conrad told us it was pretty much impossible. Any suggestions at all on how to get a reservation? Any suggestions for alternatives (apart from jiro) that aim for similar level of perfection?

Mizai in Kyoto

I guess when you talk kaiseki in Kyoto many people bring up Mizai. Unfortunately the last time we tried to get a booking, we were told they were booked out 8 months in advance. We did previously manage Sojiki Nakahigashi which really had some dishes which were beyond perfection. Would be more than happy to go back, but would love to try another Kaiseki house in Kyoto. Would consider Kitcho except the price is hard to justify. Whats the booking situation for Mizai like now? In terms of pure pursuit of food perfection (do not care for service/location) - what would be peoples top pick?

Other recommendations?
1. I remember years ago there was a sushi restaurant in Tokyo which was around the 8-10k mark for dinner service which people said had sushi comparable to the top sushi-ya's. When I tried to make a booking, they were booked out 13 months in advance - anyone remember the name?

2. Looking for recommendations in sapporo if anyone has any

3. Also looking for any great places to buy whiskey

The thing we really value in restaurants above all else is perfection in the food. It's hard to quantify or make an objective measure.
