I'm looking for a simple lemon glaze for cakes and cookies. Usually, I just mixed powdered sugar, lemon juice, and zest, but to get it thick enough, I need to use more sugar than I'd like. I'm wondering if I could use something like Arrowroot to thicken the glaze in order to lower the sugar, and am hoping for guidance on any specifics of how to prepare (blend? cook?) or what else might work?
