subbing bittersweet chocolate for unsweetened chocolate in cake recipe

I'm making a chocolate layer cake for Valentines Day and the recipe calls for 3 oz. of unsweetened chocolate. I couldn't find any fair trade and/or organic unsweetened chocolate at the co-op today and I am unlikely to get back there in time for V-Day. Could I sub some 88% (or even 72%) chocolate for the unsweetened, perhaps cutting back a bit on the sugar? TIA.
