I love salads with lentils and chickpeas in them, but I've been prepping my weekly salads on Sundays (in mason jars), and most sources I've found say not to eat these beans past a few days.
Is this an overly-safe recommendation or would lentils sealed in a mason jar on Sunday potentially be bad by Friday?
If spoilage is a concern, is there any way to stretch their life out? E.g. packing them in the bottom so that they pickle in the dressing, or something?
