Storing leaf lard

fl8rmaus | Dec 27, 201405:34 PM

Our meat delivery service left us some leaf lard a while back. It arrived frozen solid (all the meat does, for safety) and we put it in the fridge. It thawed out, and I kept thinking - oh I'm going to render that soon - but it was taking too long. I shoved it into the freezer for safekeeping BUT afterwards I wondered if that's ok. I'm overly anxious about food safety and have no experience with lard. It was vacuum packed, unopened, was in the fridge for maybe 2 weeks before I tossed it into the freezer?

Is it safe? Seems you cook the heck out of it during rendering... does it matter? Halp!
