Stone Stew

So I had some vegetables in the frig that were starting to wilt, and I hate to throw good stuff away. I had also made some onion soup earlier this week.

I thought to use the onion soup as a base and add the vegetables, regular carrots, white carrots, and radishes. I thought that is ho-hum so I added 2/3 cup of pearled barley. It became thick so I added some stout beer.

Then I drank some stout beer and thought "Hey, I have some frozen lentil soup" and in it went. Add a little more stout to the stew and me.

It looked a little thin and really lacked in the protein department, but that's ok, a little more stout and bbq pulled pork fixed that.

My only regret? I wish I wrote down what I did because the end result, believe it or not, was absolutely fantastic.

Morale of the story...go crazy with some of the ingredients you have rather than toss them, you may surprise yourself (I know I sure did!!!).
