Sponge Gourd at Grand Sichuan

The Grand Sichuan on 2nd Ave has an interesting dish called Loofah (aka Sponge Gourd). It's prepared quite simply, with the vegetable cut into slices resembling thick cucumber slices. An inherently sweet vegetable with a texture not dissimilar to a mix among ochra and zucchini and other gourds.
