Specialty (low-carb) baking ingredients in MSP?

I'm searching for a Minneapolis (preferred) or St. Paul source for some baking ingredients. (My new low-carb regime needs some serious flavor injection, so it's experimentation time!) Looking specifically for things like wheat protein isolates (5000, 8000), oat fiber, resistant oat and corn starches.

There are many sources on-line but I am (a) impatient and (b) too cheap to express ship bulk ingredients. Any ideas for pleaces to try would be much appreciated.
