I finally got the family recipe for spanakopita from my Greek friend and am dying to try it for thanksgiving. id like to make it wednesday night, but am afraid the filo will dry out or something. im not used to working with it, and she insists that i buy fresh, not frozen.
is it a bad idea to assemble it wednesday and refrigerate it, then bake it in grandmas oven on thursday when i get there? would it be better to freeze it? or just do it all thursday (which would screw up my apple pie and mashed potato plans!)?
