First solo tour of Paris

After a lot of encouragement from many people on this board I am embarking on my first solo tour of Paris. Now I am counting on all of you to help me with any suggestions.

Here are my must see Pastry Shops:
Pierre Herme
Christian Constant
La Charlotte de l'Isle
Sadaharu Aoki
Jean-Paul Hevin
L'Etoile d'Ore
Maison Kayser
Androuet (cheese)

If you haven't figured it out, I am an aspiring pastry chef. Unfortunately, I can not live by sweets alone. Lunch I will figure-out as I go. Here are my dinner choices:
Les Ambassadeurs
L'Atelier de Joel Robuchon - I recently at Joel Robuchon at the Mansion in Las Vegas, it was pricey, but the best dining experience I have ever had. The GM gave me his card and encourged me to show it to the hostess. I must take advantage of this opportunity.

I am a bit confused, what's the difference between a bistrot and brassarie?
