Smithfield/Country Ham for Breakfast?

Most of the "ham" I've seen for breakfast is truly sorry, ranging from thin, thin slices of pressed/formed ham to the reasonably thick but flavorless and watery slices at The Pantry. The rest is just the likes of Hormel. Does anyone know of a place that serves Smithfield ham or other, less salty, real country hams for breakfast? I get a whole country ham once a year in the Spring and am spoiled for 2 weeks and would love to be able to enjoy this treat, grilled, for breakfast all year long.
