I'd like to serve poached white fish (don't know what yet, I'll have to see what looks good at the market) for a dinner at the end of the week, but can't figure out what sides to put with it. I'll probably poach in a court bouillon and serve it with a mustard sauce. We'll have a salad, but I feel I need another side. Would a risotto made with the same broth as the poaching liquid work? Any other ideas?
