Shio Ramen @ Ramen Halu, SJ

In my enthusiasm for the ultra-decadent and fatty tonkotsu-style Halu ramen bowl and the seasonal specials, I'd overlooked the simple shio (salt-flavor) ramen on the menu. I remedied this recently ordering the shio ramen lunch set, $7.90, which comes with a bowl of steamed rice and okara salad.

My love for this ramen house had waned slightly when we were served a below average sloppily constructed Halu ramen (left photo) our last visit. It had softer noodles, fewer fat globules, and less concentrated stock than the mighty example I'd come to expect here.

But my faith was restored by the golden stock and chewy thin noodles of the shio ramen (right photo). The brilliantly clear and concentrated stock melded the high tones of rich chicken broth with porcine depth. Accented with the magic stardust of sweet sea salts, fried garlic and scallion bits, plus fresh green onions, the taste was outstanding without being overpowering the way the tonkotsu can be.
