Shaved noodle at Noodle Alcove

Had lunch at Noodle Alcove today...a great wonton noodle soup with hand pulled noodles. Great broth, some baby chinese spinach, and about 6 wonton. The wonton were relatively small and not the best wonton I've had--skins had an overly starchy texture, and the filling was, I think, just pork, water chestnuts, and some spices. I prefer them with a little shrimp in them as well...the Hong Kong eatery has some great ones. The noodles were, as expected, just great, with exactly the right chewy texture that I was hoping for.

One of the options, according to the people that I was with, were "shaved noodles." Any idea what these are and how they compare to the hand pulled noodles?
