I will start with one of mine - actually more of my SIL's fave - and the crowd seems to like it because it has flavors apart from the norm.
I use squash coarsely grated in place of the celery - and let stand 15min at the beginning. I also have added in bagged grated carrots. And the peppers are red,yellow and green - so it is very colorful!
Another notation on my copy is that I bake it much longer than called for otherwise I have found it too moist and not browned to my liking.
