SF butchers that sell marrow bones

I've been enjoying the resurgence of marrow bones on restaurant menus, even if they're often a bit precious ($10 for 4 tiny bones at Bix or Coco500, scraping away with little spoons before my companion finishes) or overwrought (complicated sauces as at TWO that compete with the simple flavor). They seem like the perfect fall food, at least if you're a marrow and tendon lover who likes an excuse to turn on the oven.

So encouraged by a very simple recipe in this week's NY Times

I stopped by Bryan's and asked for bones. The guy behind the counter brought out a long skinny frozen bone, like the one Pebbles wears in her hair.

He only had one. The rest were reserved.

I asked how I was going to get the marrow out, envisioning a long French fork designed just for the purpose. He offered to saw it into sections.

Total cost about $2 (around $1.50 per pound) + lemon. And was it good! I roasted it for 20 minutes at 450, topped with the parsley mixture, and was so pleased, decided to get more of them. I also threw the empty bones into a stew.

This time I hit Whole Foods on Potrero Hill, which has a huge meat counter. Asking for marrow bones is a good way to make friends with the butcher. He merrily pulled out two pounds of fresh bones and rang them up. $3.99 a pound!

Well, for marrow, probably safer if they're organic. Right? These tasted even better.

So do all butcher shops sell marrow bones? Any idea how important fresh v. frozen and organic are to taste and safety?

BTW The parsley mixture in Fergus Henderson's recipe is good on anything. Toast, tomatoes, potatoes. In looking for recipes, I came across these curative claims for Marrow Bone Brew, from "Egyptian hieroglyphs." Which I'll take with a dose of salt...
