My local Key Food sold me 2 10 pound bags of onions for just $5. I have a lot of onions in my kitchen. They are all good; about 1 1/4 inches in diameter. I've used about 3 pounds from one bag. I plan to use about 2 pounds to make carmelized onions in chicken fat to use as a sauce with a pound of bowtie noodles. I may add in oatmeal, instead of kasha, so it'd be oatmeal varnishkas. Another 5 pounds from that bag will go into making a very good home made onion soup.
I'll still have ten pounds of onions left. I last baked bread at home decades ago, but I think making a two layer focaccia bread, putting 2 pounds of sliced onions rendered translucent in olive oil in the middle and 3 pounds of sliced onions rendered translucent in olive oil on top with rosemary and thyme would be what I do next.
That'll leave 5 pounds of onions. What do you think? What's your idea?
