Secrets to making great flour tortillas?

lizmari | Jun 21, 201410:33 AM     50

My boyfriend has tried twice now to make flour tortillas at home. The first time he used a press, but didn't like it - they actually came out too thick, and last time he made them by rolling out the dough, but they came out crispy (but thin enough). I suspect he didn't use a high enough heat this last time, and cooked them for too long on each side, but I wasn't there.

The press is a pretty cheap aluminum one, if that makes a difference - I know there are cast iron presses, would they make thinner tortillas? And are they worth it if he doesn't mind rolling the dough?

I saw special "tortilla flour" in the store yesterday (for making flour tortillas) - is this just a gimmick, or is there something about this flour that would make better tortillas?

Any tips from those who have done this before?

And while we are on the subject, I want to make corn tortillas also - any hints for getting the best results?

By the way, we are using a cast iron pan for cooking the tortillas.

Thanks!
