Secret to not brown omelettes??

I think I make a pretty good omelette but I seem to be unable to keep the underside from turning brown. I would appreciate some feedback on the relative importance in this of the following:

type of pan: non-stick vs not
butter vs. something like Country Crock
temperature
leave alone vs. moving egg around in pan
covered vs. not
