I made a beautiful Fillet Mignon last night. Seasoned with salt and pepper and once seared, I threw In Garlic, butter, and rosemary. Tossed it in the over and it came out beautifully but to be honest, it wasn't the greatest steak (flavor wise). My question here is, what other spices, besides salt and pepper, do you use to sear a steak? Anything crazy to really ramp up the flavor of that crust? Anything anybody experimented with?
