Yesterday morning, I had a bit of leftover oatmeal but I was in the mood for a more savoury breakfast. So I poached a couple of eggs and threw some baby spinach leaves into the top part of the poacher where they'd be steamed. I put the eggs and spinach on top of the reheated oatmeal, added some grated fontina, a little sea salt and fruity olive oil and topped it all with a few minced chives. It was really tasty (and filling). I've also made a similar recipe with amaranth which was quite good.
