Sauces for Sliders

Hi everyone,

My partner's birthday is coming up and I want to make him a good birthday dinner. He's not a fancy guy but loves loves loves sauces. My thought was to make a bunch of mini sliders (some fish, some beef and some chicken, think meatball sized) with tons of different sauces so we could try them all and snack on a bunch of things. He also loves sandwiches haha, so I thought the two would work together.

Just wondering if anyone has any recommended sauces that I might be able to make. I would prep as much as possible in advance so the day of would be primarily assembly only. I was even thinking of getting a good frozen fried fish/chicken so I could just pop it in the oven.

I make a great curry mayo that would be good. Maybe an apple butter BBQ sauce. Anyone have some good sauce ideas they can share? Unique ones are even better.
