Chowhounds are, indeed, everywhere!
I met a delightful octogenarian on my bus trip from Maine back to New York. She offered me half of her chicken sandwich. It had three slices of good dark bread. The outer two slices were fresh and soft, but the middle slice was well toasted. I was advised to pay attention to the textural difference when I bit into it. Sure enough, biting through the soft and into the crisp bread was a subtle but different sensation that I found really enjoyable. I enjoy the bread of a sandwich at least as much as the filling. If you do too, give this a try.
